To make books that are created from .pdf files text searchable you'll need 3 things for each zip file. The .pdf file, the XML file converted from the PDF file and a book.properties file.

When making zip files on a Mac you will need to use a special utility that will not include all the hidden Mac files. We recommend Clean Archiver. https://www.sopht.jp/en/cleanarchiver/ Make sure the default is set to zip. The Then open the app and drag the images folder, book.properties file and the pdf file on to the app.
